Go Ahead. Unfriend Me.

I find social media to be so very amusing lately.

Everyone takes everything so freaking seriously. Everyone is so offended. Everyone needs to get a freaking grip.

Honestly. The funniest thing about Facebook is when someone (namely a "family" member who was more of a "Christmas card family member" than a "hey let's hang out sometime" family member) unfriends you.

It really makes me laugh.

Like I mean I literally LAUGHED OUT LOUD about it tonight. For at least 15 minutes.

Oh don't get me wrong. I've unfriended several people over the years - former friends, former cousins, former co-workers. They all deserved to be unfriended for various reasons. And I don't miss them.

But tonight I just found it totally and completely hilarious when I discovered that a particular person unfriended me. Funny because there was NO reason for me to be unfriended ... I mean other than the fact that....yeah, there was no reason.

So OH MY GOD my friend list went from 607 to 606. Ouch that hurts.

Not really.

Just means I have to buy one less stamp at Christmas time.

Finding time for family dinners

While we normally eat dinner as a family almost every day of the week, I'm usually cooking one of the "old standby" meals - pasta, tacos, chicken. You know, the boring stuff. I admit, I get sick of cooking and trying to come up with creative meals. I prefer "cooking" during the warm summer months when I can say to the husband "go grill something" and all I have to do is set the table.

Recently though I was selected to be part of the Kroger Spring Dinners campaign with BzzAgent. The purpose of the campaign was to make family dinners special. So, armed with a stack of coupons I headed to Kroger one weekend and picked up the fixings for a great Sunday dinner.

Here's a recipe for the pork roast I served:

Mahogany Pork Roast
Ingredients: 2 "Moist & Tender pork tenderloins (Kroger brand); 1/4 cup honey; 1/4 cup soy sauce; 1 large clove of garlic, minced. Directions: Combine honey, soy sauce and garlic in a large resealable bag, reserving 1/4 cup of marinade for use later. Place tenderloin in bag w/ marinade; refrigerate overnight or for 4 hours. Preheat oven to 400, lightly spray 9x13 pan w/ cooking spray. Place tenderloins in pan side by side and discard used marinade. Roast 30 minutes; brush reserved marinade over roast. Continue cooking until meat thermometer reads 155 degrees. Transfer to cutting board; let stand 10 minutes before carving.

Everyone - the kids included - loved this pork roast.

The rest of the dinner consisted of mashed potatoes, green beans, crescent rolls, and cupcakes for dessert. To make it extra special we ate in the dining room - which we rarely use. Normally the dining room table is the "catch all" table, so it was nice to sit there and enjoy a Sunday dinner.

Happy Turkey Day!

It's that time of year again....

You know...time for family drama, overindulging, and tryptophan comas at 5 p.m.

It's Thanksgiving!!!

OK, yes.
I jest about the whole family drama thing....just a bit...but only because I know my mom is reading my blog right now (hi mom!).

In all seriousness though, I love Thanksgiving.
And it's not just because this curvy girl can overindulge and not feel the slightest bit of guilt over that second piece of pecan pie.

Nope, it's because it is the ONE holiday that is still (for the most part) about family.
Halloween is fun, but it's all candy and craziness.
Christmas is so commercialized ... I still enjoy it, but more so because my kids love it.

But Thanksgiving....it's all about family.
We cook too much food.
We eat too much food.
But we're together.
And that's what matters.

So, without getting too sappy I'll say this - I'm thankful that my family is in one place and we can gather together tomorrow and enjoy an amazing dinner. Together.
